- Daftmill's first-fill ex-bourbon single cask from 2009 represents hyper-local Lowland whisky production—spirit and barley both from the same farm distillery, with Optic barley harvested in August 2006 and malted on site before summer distillation. Aged 12 years in untouched bourbon wood from July 2009 to 2021, the spirit retains its farm-grown character while developing vanilla sweetness and subtle cereal notes from fresh oak contact. Presented at cask strength as one of only 224 bottles, this is farmhouse whisky in its truest form. A whisky for those interested in single-origin production and terroir expressed through grain and spirit rather than just water.
