Caol Ila distilled in 2012 underwent dual maturation: first in a refill sherry butt, then finished in Pineau des Charentes, the ancient fortified wine from Cognac, before being bottled by Pintail at 57.9% ABV. The Pineau finish adds honeyed complexity and subtle spice to Caol Ila's classic briny, medicinal peat profile, softening edges without obscuring its maritime character. Only 659 bottles exist. A sophisticated Islay for those seeking peat and richness in balanced measure.
